It's now February

Well today is the first of February. Janurary just flew by so fast, It's hard to think what we even did. Kurt went back to work which was good because it meant money and I know he missed his friends at work. Although it was only a few of them. He was really glad when Scott came back to work this week.
Spencer started crawling in January. Which was so exciting it's not actual crawing its called commando crawling. I am so proud of him reaching all his milestones. He is now chasing anything around.... Mainly feet and my cat.. I am glad I have a cat that likes to be pinched. (Long story) Spencer has also a tooth coming through YAY!! Although he bit me today it didnt feel the best I can tell you that. And for me I have finially started screen printing it is fun but I really need my glasses. Because I keep saying to Kurt "Is it straight?" So now I have a new found hobby of art. I never saw myself as a crafty person. Thats more Kurt.
Anyway I am glad its the weekend, That means Kurt is home and we get to spend some time as a family..

I have a baby in pain from teething

Well Spencer can't sleep because his teeth are coming through so I thought while he played on the floor I will do this thing that Cas sent me.... Anyway I found it fun...

Our Long Weekend

I hope everyone had a lovely long weekend. Kurt was very lucky this long weekend having an rdo yesterday. So it was quite nice to sleep in. But annoying this morning when the alarm went off. Anyway. We just really tried to relax on monday trying to do t-shirts and just spend time together as a family. Yesterday we did some shopping as nappies are cheap at safeway this week. Also went dream shopping. Looking at all the nice tvs at harvey norman. We have chosen the one we want so hopefully soon we can sell both our tvs and buy our nice LCD screen tv. That we have always dreamed of. Today has been a busy day Spencer had his health check with Cathy this morning he is doing well expect for the fact his head size is above average. His head is sizing at 45 cms. Anyway I didnt think it was that big. But he is now 7.6kgs and is 66cm tall. But he is doing well with his comando crawling.

Anyway Kurt and I found it hard to hear about President Hinckley. It's very sad but we know it was time for him to meet his wife again.

Our Australia Day

Well yesterday was Aus Day! We had a nice Saturday Robbie and James had some friends over. That was fun. Spencer is still teething pretty badly so he was a touch grumpy. We actually didn't do all that much. Expect for pick the bread from Lissa's and also take Spencer for a little drive to relax him. Last night we went out with my brother James and two close friends Courtney and Jess. Which was nice. Although the food we ate last night didn't agree with me. I would so go there again!! Its called rich maha and I think its the best place ever! That is if you like spicey food as much as Kurt and I do. Anyway we had a lovely night. Kurt has the next 2 days off. Which should be relaxing for both of us. I hope you all had an relaxing weekend.

Spencer and the Icey pole

Spencer loves Icey poles, If anyone has one he is your best friend. This afternoon Dad had an icey pole. Poppy is very good with Spencer and letting him have a little. Although with Spencer its never a little. He decided to take the whole icey pole off Poppy and have it to himself. Sadly Spencer didn't end up eating the rest of the icey pole. I ended up finishing it off.

Spencer Loves Daddy

I have really started to notice Spencer's love for his daddy. Since day one when Spencer was born Kurt just couldn't put our little man down. When the midwife told him that he was holding him to much, Kurt didn't take any notice. He thought seeing I got to hold Spencer for the last 9 months it was His turn to hold and look after him. I thought it was great I didn't have to change a nappy until night 2!! Even if its late at night and Spencer woke go to sleep because of the poor little mans teeth. Kurt will either take Spencer for a nice drive around Lilydale or simple snuggle with him.

Our Eventful Day

Today we had an eventful today for some strange reason Kurt and James decided to jump on the latter and go on the roof and Spencer did some thoughtful thinking.

Lamington Cheesecake Slice

A few days ago I was watching sunrise and they were making things for Australia Day and They made this thing called a lamington cheesecake slice, I thought to myself it looked easy to make. So I did so. I have to say its one of the best things I have made in SO long! Although I think I would have to put a warning lable on it. (read below for warning lable)

Lamington cheesecake slice
Prep Time: 30 minutes

Ingredients

18 lamington fingers
1/4 cup moist shredded coconut

FILLING
240g block white eating chocolate, chopped
300ml tub thickened cream
1 teaspoon gelatine
2 teaspoons cold water
250g tub mascarpone cheese
125g packet cream cheese
1/2 cup caster sugar
1 teaspoon vanilla extract

TOPPING
250g block dark eating chocolate, chopped
1/2 cup thickened cream

Method
Grease a 17cm x 27cm rectangular slice pan. Line base and sides with baking paper extending paper 2cm up sides of pan.
Lay lamington fingers, side-by-side, so that they over base of prepared pan.
To make filling, place chocolate and 1/2 cup of the cream in a heatproof bowl. Sit bowl over a saucepan of simmering water, stir until chocolate is melted. Remove bowl from heat. Sprinkle gelatine over cold water in a small heatproof jug. Stand jug in same pan of simmering water, stir until gelatine is dissolved. Remove and stir into warm chocolate.
Beat mascrpone, cream cheese, sugar and vanilla in small bowl with an electric mixer until soft and creamy. With motor operating, beat in chocolate mixture until combined. Beat remaining cream in a small bowl until soft peaks form. Fold cream into cheese mixture.
Pour filling over lamington fingers. Cover and refrigerate for several hours or overnight until set.
To make topping, place chocolate and cream in a heatproof bowl. Sit bowl over a pan of simmering water, stir until chocolate is melted. Remove from heat and refrigerate for 20 minutes or until slightly thickened.
Lift slice from pan, pour over topping and spread to cover. Sprinkle with coconut. Refrigerate until set.
Serve cut into squares. (Caution cut into small squares. VERY rich! Unless you enjoy the very rich dark chocolate flavour.)

My baby is almost 6 months old

This Saturday coming my baby boy turns 6 months old. He is growing into such a good little boy. I can tell you he is so bright and happy all the time expect for when we tell him what to do like go to sleep and stop pinching mummy when feeding or even sleeping in your own bed can be fun! But Kurt and I really love him and as he grows older want the best for him...

Spencer is on the move.

Well exciting news this week Spencer is on the move he has gone from stomach crawling to normal crawling! Also I felt looking through my cousins blogs this morning I thought I should really update some photos of Spencer. So our boy is almost 6 months old and gosh the time flys. Ahh.... My poor baby boy is barking

Well on Sunday afternoon Spencer woke up with a cough and the poor bubby hasn't slept since! So We went through monday and he was coughing still... I tried to book an appointment but they were all booked up than on Tuesday I got into the doctor and my doctor said it was just a viral infection so I thought okay I can handle that..... At 9pm last night we had to go get a vaperioser. While we were out Spencer was crying because his breathing started to hurt him. So I thought oh know what the heck is wrong with my boy.. With me starting to go into distress mode We thought what should we do... So we went through another bad nights sleep to realise this morning the was only one thing left to do go to the hospital... We got there at 9am and were out by 9:45am. It turns out that my little monster has croup!! My poor little monkey! Lissa keeps telling me it could be a lot worse. I am just a stressful person. But The doctor and lissa told me it gets worse before it gets better so we are preparing for another nights sleep and hopefully tonight we should get a good one. I joke to Kurt every time Spencer coughs that it sounds like mum and dads dog tessy. I didn't realise how bad the cough could be, Anyway must be off. xoxo

Today after church Kurt Spencer and me went to visit my older sister to get some photos. We have got some really cute ones. I am really glad that Spencers cousins are around him because I know when I was growing up I wish I had my cousins around me. We also realised we could never get a perfect photo of all of them.... I think Hamish might be trying to tickle spencer or something.
